Vegetarian Slow Cooker Black Bean Soup
My family loves enjoying a delicious bowl of soup, especially during the colder months. We do eat meat but with quality meat prices rising, I love to find recipes my family loves that don’t include meat. This soup does include a healthy serving of protein due to the black beans and it is also very calorie friendly if you are watching your weight. Even my daughter who is picky about food feel in love with this delicious vegetarian slow cooker black bean soup and finished all the leftovers.
Vegetarian Slow Cooker Black Bean Soup Recipe
- 1 tbsp minced garlic/2 cloves
- 1 onion, chopped
- 4 tsps chili powder
- 2 tsps ground cumin
- 1/2 tsp pepper
- 1 tsp salt
- 8 cups vegetable stock**
- 4 cans (15 ounce) black beans, drained and rinsed
- 2 cans whole kernel corn, drained
- 2 cans carrots, drained
- 2 cans (15 ounces) diced tomatoes
In large slow cooker, combine all the ingredients and stir completely.
Cook on low for 6-8 hours or high for 3-4 hours.
Serve with crackers or fresh bread for a complete meal.
