Johnny’s Mini Honey-Comb Banoffee Pies
I love cereal and at any given time you will find several different varieties in our pantry. Not only is cereal a breakfast staple in our home but you can find us enjoying it all day long. A bag of my favorite cereal makes the perfect afternoon snack (no milk required) and who doesn’t like a bowl of cereal as a late night snack. Since I always have cereal on hand, I often use it recipes when I am cooking and need to make quick substitutions. That is what inspired me to create a delicious Honey-Comb Crust to hold the delicious filling for Mini Banoffee Pies.
I love creating delicious treats for my family based on new movie releases and these personal sized banoffee pies are a nod to my favorite character from the new upcoming film, SING. My favorite character, Johnny, is a young British gorilla who wants to sing instead of follow in his family’s criminal footsteps. Banoffee pie originated in Britain and I what gorilla doesn’t love bananas. This personalized banoffee pies are simple to make and are a sweet treat to enjoy before or after you see SING.
On my recent trip to Walmart, I discovered that Post was already getting in the SING spirit with a SING National Sweepstakes. This sweepstakes gives consumers a chance to win $100,000 or free movie tickets.
The sweepstakes is easy to enter when you purchase specially-marked Post cereal boxes. Find the printed code inside the cereal box and enter it into the sweepstakes website. Make sure to stock up on everyone’s favorite cereal like I did because you never know when you might want a delicious bowl of cereal or snack on the go.
I recommend having a cereal snack station nearby while making these delicious pies because you are going to have a hard time resisting eating this delicious dessert before it is ready. With only a few ingredients it doesn’t take long to make but there is something about opening a new bag of cereal and wanting a treat. Once you have your cereal snack station, you are ready to get started.
Johnny’s Mini Honey-Comb Banoffee Pies
Ingredients
- 6 Mini Pie Dishes or Ramkins
- 2 ripe bananas, sliced
- Refrigerated Whipped Topping (aerosol or bowl)
- 13.4 ounce can Dulce De Leche (Caramelized Sweetened Condensed Milk)
- 3 cups Honey-Comb Cereal
- 3 Tbsp margarine or butter, melted
- 1/4 cup chocolate chips
Directions
- Crush up Honey-Comb cereal into crumbs. (A food processor or food chopper is the quickest but you can also place them in a baggie and crush them with a rolling pin.)
- Combine Honey-Comb crumbs and melted margarine in a medium bowl until completely combined.
- Press crumb mixture in the bottom and sides of mini pie dishes (If using Ramkins, create a layer on the bottom.)
- Place pie dishes in the refrigerator and let set for 30-45 minutes.
- Remove pie dishes and top the Honey-Comb crust with Dulce De Leche (about 2-3 tbsp)
- Top with sliced bananas, whipped topping, and chocolate chips.
- Serve immediately or place in refrigerator until ready to eat.
I told you these were simple to make and the Honey-Comb crust is just the right level of sweetness without overwhelming the pie filling. This batch of Banoffee Pies didn’t even last a few hours in my house so if you have a family with a sweet tooth, you might want to make a double batch.

Ingredients
