Guinness Chocolate Cookies
Now, you might be wondering, “what is the secret behind these Guinness Chocolate Cookies?” Well, you might be surprised, the secret ingredient is no secret at all! It’s in the name itself, our beloved Guinness beer!
By introducing Guinness into our traditional chocolate cookie recipe, we’re embarking on a culinary journey that is nothing short of magical. Here’s why: Guinness, with its distinct and robust flavor profile, adds depth and complexity to the cookies. This makes them a standout in any cookie lineup.
The remarkable taste of Guinness, a blend of lightly sweet malt, bitter hops, and a hint of coffee. The malty sweetness of the beer enhances the chocolate, while the slightly bitter undertones cut through the sweetness, creating a balance that is simply irresistible.
But it’s not just about the taste! Adding Guinness also impacts the texture of the cookies. The beer helps to create a cookie that is crispy on the outside, but wonderfully soft and chewy on the inside. Perfect for any St. Patrick’s Day party!
Does the Alcohol Really Cook Off?
One question that often pops up when baking or cooking with alcoholic beverages is, “Does the alcohol really cook off?” The simple answer is yes, most of it does.
During the baking process, heat causes the alcohol to evaporate, leaving behind the robust flavors of the beer without the alcoholic content.
So, while you’ll be able to taste the delicious, unique flavor of the Guinness in your cookies, you won’t need to worry about the alcohol.
It’s important to note, though, that not 100% of the alcohol evaporates during baking. However, the remaining amount is minimal and generally considered non-intoxicating.
This is why our Guinness Chocolate Cookies are not only rich in flavor, but also safe to enjoy by all. They carry the essence and depth of Guinness without the alcoholic punch.

How to Make Guinness Cookies
Creating these mouthwatering Guinness Chocolate Cookies is a delightful process, almost as delightful as enjoying the final product.
Step 1: Creating the Base
Our journey begins with the creation of the base. A blend of room-temperature unsalted butter, sugar, and dark brown sugar. Aiming for a light and fluffy mixture not only gives our cookies a tender crumb, but also ensures they rise beautifully in the oven.
Step 2: Adding the Eggs and Vanilla Extract
Next, we introduce the eggs, one at a time, ensuring each is thoroughly mixed into the butter and sugar blend. The eggs provide structure and add moisture to our cookies.
We follow this with the addition of the vanilla extract, which enhances the sweetness and adds a beautiful aroma to our dough.
Step 3: Incorporating the Guinness Beer
Our star ingredient, the Guinness beer, makes its entrance at this stage. Pour it slowly into the mixture and blend well. The mixture might look a bit curdled initially, but don’t worry! As you mix, it integrates smoothly, creating a unique base for our cookies.
Step 4: Merging the Dry Ingredients
The union of our dry ingredients, all-purpose flour, unsweetened cocoa powder, baking soda, and salt comes next.
These are first mixed in a separate bowl before being gradually incorporated into the butter, sugar, and beer mixture. This method ensures that all the dry ingredients are well integrated without over mixing.
Step 5: Introducing the Chocolate Chips
The final flourish to our dough is the addition of semisweet chocolate chips. These little morsels of chocolate elevate our cookies to a whole new level, adding a delightful surprise with every bite.
Step 6: Preparing and Baking the Cookies
Once the dough is prepared, it’s time to form small balls and place them onto our baking sheet, remembering to leave enough space for spreading. Into the preheated oven they go, and as they bake, the kitchen fills up with the rich, enticing aroma of chocolate and Guinness.

Storing Your Cookies
Now that we’ve baked our delightful Guinness Chocolate Cookies, it’s essential to talk about proper storage. Ensuring these scrumptious treats remain fresh and delectable over time is just as important as the process of making them.
The first step after baking is cooling the cookies completely. This helps to lock in the flavors and sets the texture. After spending a few minutes on the baking sheet, transfer them to a wire rack to cool evenly, thus preventing the bottoms from getting soggy from the steam.
When it comes to storing your cookies, your best ally is an airtight container. This simple yet effective tool will keep your cookies fresh and prevent them from drying out. If an airtight container isn’t readily available, a resealable plastic bag will do the job too.
With these storage conditions, your Guinness Chocolate Cookies can stay fresh and flavorful for up to a week. However, for the most delightful experience, I recommend enjoying these cookies within a few days of baking.
Can Guinness Chocolate Cookies be Frozen?
If you find yourself with leftover Guinness Chocolate Cookies or want to prepare them ahead of time, freezing is a great option to preserve their deliciousness.
First, make sure the cookies are completely cool before freezing. This prevents condensation and maintains their texture.
Next, freeze the cookies individually by arranging them on a baking sheet with some space between each one. Freeze until solid, usually for about an hour.
Transfer the individually frozen cookies to an airtight container or freezer-safe zip-lock bag. If stacking, use parchment or wax paper to separate the layers and prevent sticking.
Label the container or bag with the date and store it in the freezer. These cookies can be frozen for up to 3 months.
When you’re ready to enjoy them, simply thaw the desired number of cookies at room temperature.
