With the cold weather all around us, I turn to hearty soups and stews to warm my family up and provide them with a great meal. The problem is sometimes I forget to put these in the crockpot ahead of time and it is dinner time and I don’t have anything to feed them. My family loves any kind of potato soup but that is not a dish that I thought I could prepare in under 30 minutes until I visited the recipe section at Idahoan. There I discovered a wide array of soups that used Idahoan’s Flavored Mashed Potatoes to create delicious potato soups fast. I was astonished at how easy but a little skeptical about the taste. So this past Sunday, my family and I put their Loaded Baked Bean Soup to the test.
It passed with flying colors. There is not a single drop of soup left after 24 hours and I quadrupled the recipe. I did make a few variations to make the recipe relevant to my family. Check out my version and feed your family this satisfying and delicious, Easy Baked Bean and Potato Soup. Easy Baked Bean and Potato Recipe
4 packages of Idahoan ® Loaded Baked Flavored Mashed Potatoes, Dry
2 cups chopped onion
1 cup chopped carrot
96 oz Reduced Sodium Chicken Broth (Substitute 64 oz Chicken Broth and 32 oz Water)
1 pound Bacon ends and pieces, cooked and crumbled into small pieces
2 cups of chopped Ham (perfect for finishing off a Ham Bone)
3 Cans of Cannelini Beans (White Kidney Beans)
3 Tbsp Olive Oil
Shredded Colby Jack Cheese for toppings
In Large pot saute onions and carrots in 3 Tbsp Olive Oil until soft. (about 5 minutes)
While onions are cooking, drain and rinse Cannelini Beans.
Once onions and carrots are soft,add Cannelini Beans and mix well.
Cook for 5 minutes and then add Bacon and Ham to mixture.
Cook for another 5 minutes and then add Chicken Broth (and water) and all packs of Mashed Potatoes.
Mix very well so that the potato flakes are dissolved.
Cook over medium heat for 15 minutes until the soup is hot all the way thru and it is starting to thicken.
Remove from heat and serve with Shredded Colby Jack Cheese to garnish.
Optional Garnish Ideas: Green Onions, Spanish Onion, Cheddar Cheese, or Bacon Crumbles.
