I was super excited when I discovered the pesto sauce and risotto kit because I had a baked parmesan pesto chicken recipe that I had been wanting to make and this gave me the perfect reason. I wanted something with a more rich, hearty flavor so I pared it with the mushroom risotto. The baked parmesan pesto chicken is simple to make and won the taste buds of my family over in one bite. Baked Parmesan Pesto Chicken
2 pounds boneless, skinless chicken breast or tenders
2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
3.5 oz pesto
Salt & Pepper
Preheat oven to 400 degrees and spray a baking dish with nonstick cooking spray.
Slice chicken breast into tenders and place in baking dish.
Top the chicken with pesto and spread to cover.
Sprinkle with salt and pepper.
Distribute mozzarella cheese evenly over all the chicken tenders.
Sprinkle with Italian seasoning and parmesan cheese.
Bake for 40 minutes.
Remove from over and serve over risotto or pasta.
I was impressed with the flavors and the quality of the Pesto Sauce, Mushroom Risotto, and the Truffle Zest. My husband was impressed with the coffee and said it is the best coffee he has ever taste. We have a few items that we have yet to explore and can’t wait to try them out.
