30 Minute Meal – Hamburger Soup
I don’t know how often that it is almost dinner time and I realize that I haven’t prepared anything for dinner. This often leads to a mad dash through the pantry and freezer trying to find something I can make fast. One of my favorite thing to make is soup but these can often take time to cook. However, my favorite Hamburger Soup recipe can be done in 30 minutes and takes advantage of the canned goods in my pantry to bring in great flavor with less time.
This Hamburger Soup can also easily be adjusted to a slow cooker or for using fresh veggies which makes it one of the most versatile recipes in my arsenal. It is also one of the few soups that my family will eat anytime of the year. If there is a veggie that your family doesn’t like, simply swap in one they will eat and satisfy even your pickiest eaters.
Hamburger Soup Recipe
- 1 pound lean ground beef
- 28 oz tomatoes (diced)
- 15 oz can black beans
- 15 oz can corn
- 15 oz can carrots
- 1-2 Tbs minced garlic
- 4 cups chicken broth
- 2 tsp Italian Seasoning
- Salt to taste
- 4-6 tbsp tomato paste
- 2 tsp onion powder
- 2 tsp garlic salt
- In a medium skillet, brown hamburger over medium heat.
- Remove hamburger from heat and drain to remove the fat.
- Place drained hamburger in a large stock pot.
- Add the remaining ingredients to the the stock pot and bring to a light boil.
- Reduce heat and simmer for 30 minutes. If you need more time you can keep it on low and simmer for up to 1 1/2 hours.
To make this recipe in your Slow Cooker if you are planning ahead, brown the hamburger and then place all the ingredients in the Slow Cooker/CrockPot and cook on low 6-8 hours or high 3-4 hours.
Ground Turkey or Chicken for Hamburger
Mixed Veggies for the Corn or Carrots (make sure to substitute 1 can for 1 can)
Kidney Beans or Cannellini Beans for Black Beans
Crushed Tomatoes for Diced Tomatoes
