Easy Grilled Shrimp Appetizer with TRISCUIT CRACKERS
I love the warmer months because it means that we are spending more time outdoors with family and friends. I love preparing meals and more on our grill because it allows me to join in the festivities without being stuck indoors. I always make sure that my family and guests don’t go hungry so I like to have appetizers and snacks on hand for munching while visiting. TRISCUIT crackers are the perfect for topping with our favorite appetizer and snack toppings. I recently discovered the TRISCUIT Smoked Gouda and Mediterranean Olive flavors and knew they would go perfectly with my delicious grilled shrimp appetizer.
Even though we werent’ having company over this weekend, I decided to whip up this easy grilled shrimp appetizer for my family as a special treat. So on my recent visit to Kroger I picked up all ingredients I needed and bought more of the TRISCUIT Smoked Gouda and Mediterranean Olive Crackers. I love Kroger’s Private Selection label for cheese and produce because of its high quality and lower prices. My family could not wait for me to make this grilled shrimp appetizer and it was eaten as quickly as it was made. So get ready for smiling faces and happy stomachs when you serve up this delicious recipe.
Easy Grilled Shrimp Recipe with TRISCUIT Crackers
- 1/2 cup Olive Oil
- 3 tbsp Lemon Juice
- 1/2 tsp Salt
- 1/2 tsp Red Pepper Flakes
- 1 tsp Minced Garlic
- 1 lb fresh or frozen peeled & deveined shrimp (fresh or frozen-thawed)
- 6 oz. jar of Pitted Kalmata Olives, drained
- 1 cup Baby Spinach
- 1 tsp Olive Oil
- 1 tsp Minced Garlic
- Salt & Pepper
- 8 oz Gouda Cheese

This Grilled Shrimp Appetizer is easy to make and you can prepare the ingredients before hand to save time when company comes over. The first thing that you want to do is prepare the marinade for the shrimp. In a large bowl combine the first five ingredients. Stir together well so the flavor profiles can combine. Once it is mixed well you can add your shrimp and allow them to marinate. I like to let my shrimp marinate about one hour because the lemon juice can break down the shrimp if marinated for too long and make them mushy.You can always prepare the marinade and hold off on adding the shrimp till about one hour before you will grill them.
The next step is to prepare the olive tapenade. In a blender or food processor add 1 tsp of minced garlic and olive oil to the kalmata olives. Pulse for about 10 seconds until the olives are broken down. Then add the baby spinach and a dash of salt and pepper to the olive mixture. Continue to pulse on low until all the ingredients are combined. The olive tapenade will hold in the refrigerator for 24 hours so feel free to make this the night before you need it if you will be short on time.
Preheat your grill to 350 degrees. Place the shrimp on a grill basket (If you don’t have one lay a piece of foil on the grill so the shrimp don’t fall through the grates.) Grill the shrimp for about 5-8 minutes, flipping the shrimp over halfway through grilling. Remove the shrimp from the grill and let rest for a few minutes before assembling.
While the shrimp is grilling, you can slice the Gouda. Make the pieces slightly smaller (width wise) than the TRISCUIT and about 1/4 inch thick. You can start assembling the grilled shrimp appetizer as soon as the cheese is sliced.
Place TRISCUIT crackers on a plate and top with a piece of sliced Gouda, follow with a tablespoon of the olive tapenade and finish with a grilled shrimp. The last thing to do is enjoy this Delicious Grilled Shrimp Appetizer and be ready when they ask for more.
