Cranberry Brie Bites
The fall season ushers in a time of many gatherings with friends and family as the holidays approach. This is always a time I treasure most because memories are being made. Plus all of these gatherings give me an excuse to make my favorite dishes and try out new ones. I like my desserts but I often like a dish that blends a touch of sweet with savory flavors. Which is probably why I am always paring fruit and cheese together. It isn’t always just fresh fruit though, I am a huge fan of Ocean Spray® Craisins® Dried Cranberries. These little bites of deliciousness are perfect on their own and go great with sweet and savory recipes.
When you are hosting a large group of people the last thing you want is to serve food that is difficult or messy to eat. Since I am a huge fruit and cheese lover, I combined the classic flavors of Brie and Cranberry in an easy to eat appetizer. These Cranberry Brie Bites are simple to make and the Craisins® Dried Cranberries give that extra zip to make them a delight in your mouth.
Since I am known to eat Craisins® Dried Cranberries by the handful (or two), I like to pick up the 24 ounce package so I don’t run out so quickly. Unfortunately, Ocean Spray® Craisins® Dried Cranberries have disappeared from my local Sam’s Club. Lucky for me, I quickly discovered that other retailers are stocking this size. I picked two bags up this past weekend at my local Target.
Since I admitted to you that I like to devour Craisins® Dried Cranberries by the handful, I want to explain why I think they are amazing. First, 1/4 cup of them is equal to a 1/2 cup of fruit. This means that I can easily add them to dish and mark a fruit serving off for the day. Second, the taste, texture, and color held add flavor and variety to the meals I make. Third, they are easily taken with me as a quick snack or added to my favorite dishes. Cranberry Brie Bites
Ingredients
1 refrigerated pizza dough
1-2 cups Craisins® Dried Cranberries
8 oz Brie, rind removed
(To easily remove the rind, wrap the Brie in plastic wrap and freeze for 30 minutes. Remove from the freezer and slice off the top and bottom rinds. Slice off the sides and then use in your recipe.)
Directions
Preheat oven to 400 degrees.
Spray a mini muffin pan with non stick cooking spray.
Roll out pizza dough on a clean, lightly floured surface till it is 14 x 16.
Use a pizza cutter or knife to slice it into 24 even squares (about 2 inches square.)
Place each pizza dough square into a well in the mini muffin pan.
Slice the brie into 24 pieces and place in each pizza dough cup.
Top with 1 tsp dried cranberries.
Bake for 7-10 minutes, until the edges of the pizza dough are lightly browned.
Remove and Serve Warm.
These Cranberry Brie Bites are so delicious that even my husband (who isn’t a huge cheese fan) fell in love. He was headed out the day I made them and quickly absconded with a bowlful as he went out the door. The zip of the Craisins® Dried Cranberries combines well with the savory of the Brie to make these the perfect bite. Yum! My family loves cranberries, so I’m sure they’d instantly fall in love with this. Such a clever idea to pair them with brie. I like how I can easily adapt these to be gluten free, so my whole family can enjoy them.

Crasins are the best – I do a killer crasin struessel muffin. They’re also great mixed with nuts like a trail mix.
