Bellavitano Cheese and Olive Tapenade Recipe
I am a huge cheese lover and have gradually converted my husband to loving cheese almost as much me. One of our family’s favorite cheese brands is Sartori. That is why I was super geeked to team up with them again to create a delicious recipe featuring their tantalizing Bellavitano cheese. One of my favorite things about their Bellavitano cheese is that it comes in several different varieties like black pepper, chai, and merlot. I used the Merlot Bellavitano Cheese in this recipe but any of their tasty varieties can easily be substituted in.
Ingredients
1 5.3 oz wedge of Bellavitano Cheese
1 cup black olives, pitted
1 cup green olives
2 Tbsp olive oil
2 clove garlic
1/2 lemon
Salt and Pepper
Directions
Combine black olives, green olives and garlic in food processor. Process on low until the pieces are chopped finely and well mixed. Add the juice from the 1/2 lemon, olive oil, and salt & pepper (to taste). Continue processing for a few more seconds until the mixture is combined very well. The time will depend on how small you want the pieces. I used by Nutri Ninja Blender and processed it on low for about 20 – 30 seconds total.
I served this with the Bellavitano Cheese sliced on top of a crostini and then topped with olive tapenade. However, if you want to have guests serve it up themselves. Toss chunks of the cheese in the food processor with the olives at the beginning and puree it with the other ingredients. It tastes just as delicious and will save you plating time.
